With the recent arrival in Paris of another handful of specialty coffee shops, it is safe to say that third-wave coffee culture is well and truly consolidating its position in the city. By its very name, Fondation Café has laid yet another foundation in this ever-expanding structure.

Having opened the new coffee bar in September 2013, barista and founder Chris Nielson aims not only to cater for the needs of pre-existing specialty coffee drinkers, but also to educate unenlightened locals. Positioned behind his impressively majestic Kees Van Der Westen Spirit, imported from The Netherlands, he carefully crafts each cup of coffee to reflect his years of experience in the industry. 


Those already familiar with the culture are sure to be served exactly what they want, while newcomers are treated to detailed explanations–in French, Swedish or English–of why they are drinking something special. With a history of barista work at The Source and Mecca in Sydney, followed by Ten Belles, Chris and his electrifying hairdo guarantee that no one leaves unsatisfied.

The impeccably designed space reflects the focus on coffee. Minimalistic décor and the tiny size of the interior ensure that your attention is immediately drawn to the coffee machine, which captures the spirit of the place in more than just its name. There are a few tables, inside and out, as well as a small counter for those who prefer to sip standing. As a dedicated coffee bar, Fondation Café is not abounding in food options, but between the Emperor Norton granola, the chocolate tart and other delectable cakes and cookies, your sweet tooth is more than catered for. Those in need of a savoury bite will find happiness in the avocado on toast, served with salt and chilli powder. 


Chris, Manuel and Lauren, the owners of Fondation Café, have created an embodiment of what some predict to be the future of coffee in Paris. Whether or not that prediction may be true, it is undeniable that people must change their attitude towards the coffee culture of the city, and Fondation Café is an excellent place to start.
